How to make Speck

 

 

 

  • 30 kg bacon
  • 1 kg salt
  • 1 kg garlic
  • 1 handful coriander
  • 1 handful marjoram

  • 3 handsful pepper
  • 1 handsful caraway
  • 3 handsful savory
  • 3 handsful juniper

Chop the herbs and garlic finely. Mix well with salt, pepper, savory and juniper. Press the bacon into a barrel. Put it into a cold dark room for three days. On the third day put water on the bacon and press down with a heavy stone. Leave the bacon alone for a fortnight. Cure it for 5 weeks at the least.
