Chop the herbs and garlic finely. Mix well with salt, pepper, savory and juniper. Press the bacon into a barrel. Put it into a cold dark room for three days. On the third day put water on the bacon and press down with a heavy stone. Leave the bacon alone for a fortnight. Cure it for 5 weeks at the least. |
